Hi! I am new to some of this and was wondering what the best way to write a risk assessment was for ingredients/suppliers for the supplier approval program? Can it just be in the ingredient HACCP or do I need to actually write out some type of risk assessment for every ingredient? Thanks so much!

Hi, welcome to the forum. You can group your ingredients for risk assessment. Please, make sure you're assessing the whole food safety system of your supplier to approve them.

FDA! Currently working towards a NSF audit as well.

After receiving all the relevant information I have requested from Suppliers, I use a Supplier like score card.  This 'score card' asks if all documents have been received, asks to rate the risk of the material being supplied and then asks to rate the risk of the supplier after review of the requested documents.  The final step is 'Approving' or "Disapproving' the supplier and then signing off.  

 

In all honesty it is up to you to develop the process and be able to show an auditor how you do such with evidence based on the audit scheme you are being audited to.  Just make sure you are covering whatever code you are being audited to.
