Hi All, 

 

We are producing yeast and soda breads and for the efficiency some days we put the excess bread into the freezer and defrost and dispatch it later according to the orders-We defrost them in room temperature-the shelf life is 5 days. Sometimes our customers refreeze the bread as well, would refreezing compromise the food safety? Could you please share your thoughts? and do you know any EU guideline on this.

It would not impact safety. It may however impact quality.
