Please explain how to validation and verification ,of cleaning / sanitation process (CIP) in raw meat steak facility? CIP for Brine solution marination overhead pipes.

here's a couple suggestions

 

You could use ATP swabs in a section of the pipe---parts of it should be available for disassembly

 

Run buffred peptone through a section and then plate it at various dilutions

 

Gather solution from the final step of the CIP and plate that

Depending on how your CIP system works, you might try reaching out to the manufacturer of the system/CIP chemicals to get their input on how to validate the system.

 

Scampi has good advice on validating the effectiveness via ATP/micro plating. You could also verify the chemical concentration through titration or test strips during the appropriate step in the CIP cycle.
