Anyone could share any HACCP ideas? I just started working in a Company that make tortillas and trying to work in the HACCP plan and I am looking for the correct temperature for cooking tortillas? ..

AIBI has a cook step validation calculator for bakery type items. Im not sure if tortillas are included.
