Good Morning All,

 

I have a question in relation to a stainless steel table with 2 shelfs.  Is it possible to have the top be food contact and the bottom be non-food contact?  If so, should we label each or would putting that in a program and doing training suffice? Perhaps all of the above?

I don't think there's anything wrong with saying no food on the bottom shelf, but since it's in proximity to the food handling area you're going to need to clean it and treat it as if it is food contact for sanitation purposes.  Just curious, what are you going to have the employees store on the bottom of the table?

Better to opt for the top & bottom made of food grade material.

Yes it possible to have the top be food contact and the bottom be non-food contact!  Make sure the non-food contact does not have any dust or anything that could contaminate the food contact during processing (risk assessment)
As mentioned previously both shelves should be cleaned daily as if they are both food contact surfaces (everything should be removed daily for cleaning).    Training is a must; labeling always helps folks stay in compliance; and writing it into your sanitation program and storage program (or something similiar) will also clarify what is being done.

We found a work bench where there is 2 levels. The food contact is on top and the bottom is non-food contact. The bottom one is coloured to differentiate it. Same colour as the non-food contact cleaning tool. Added to start up checks to always inspect for any wear and tear.
