Conducting a risk analysis for 9.7.1 Separation of Function, high-risk processes.   What would be considered a "food safety intervention"?   I see that it may be similar to a kill step.   Does SQF have a definition for food safety intervention?   

 

The processing of high-risk food shall be conducted under controlled conditions such that sensitive areas, in which the high-risk food has undergone a “kill” step, a “food safety intervention” or is subject to post-process handling, are protected/segregated from other processes, raw materials or staff who handle raw materials, to ensure cross-contamination is minimized.

Hi Lucho,

 

A food safety interevention would be a control measure to prevent, reduce or eliminate a hazard.

 

This clause is about post-process control/handling of high-risk food.
