My SQF auditors have always indicated a preference that employees are trained directly from the SOP's.  If you need to create condensed versions for training purposes, they should be generated based on your own programs and focus exclusively on what that employee's role is in that program (and then they should be part of your controlled documents, reviewed annually and any time you change the parent program).  Ex:  I don't expect a production employee to read the entire food fraud SOP to learn what to do about verifying from the suppliers, but they should be aware that food fraud exists and that if they suspect a raw material they're handling isn't what it's supposed to be, they need to report it.

I've had clients who spent a non-insignificant amount of money to purchase some generic off-the-interweb GMP training videos and handouts, and they caught a ding on training because the generic stuff didn't match what their SOPs stated.
