In my opinion, theoretical chemistry is not valid for something like this.
You may find a formula that estimates the amount of lye in your chips, but the only way to know is through real-life testing.
I recommend finding a laboratory in your area that specializes in food analysis.
They will be able to take a sample of your chips and determine how much caustic soda remains in a serving.
Titrations will need to be completed. This can be a pretty difficult process.
It is likely beyond the scope of most food facilities. I am not aware of any test strips or other easy processes.
Best to let the chemistry professionals handle this one. Especially since too much caustic lye can be dangerous to customers.
