Our supervising Rabbi visits every month. Reviews schedules A&B, does inspection of storage areas for compliance of ingredients & finished products to schedules (we are OU-D). Any noncompliances must be answered - seldom happens, kosher verification is part of our ingredient approval process.

Our Rabbi visits once a month.  I've had thorough rabbis, cool rabbis, and mean rabbis.  I've had Rabbis turn on the oven or participate in the process occasionally.  Don't shake their hand!  I had one rabbi who would constantly make degrading comments about women and told me I was inviting him into the bedroom by shaking his hand.  He did mention that if there had been a man working he wold have shaken his hand twice, once for me.  If hand shaking is an invitation into the bedroom, I'm not sure why it's more okay to do it to a man (TWICE!).  In general, rabbis are people and like most auditors/people, they are generally super respectful if a little condescending.  


What I find more interesting is what happens if we give someone something that isn't kosher.  If we give someone mislabelled allergies, we'll cause a potentially fatal reaction, but what happens if you eat food that isn't really kosher?  Do you go to hell? What if you never even learn its not kosher?

I've found that having a rudimentary understanding of their theology (especially their eschatology) has helped me in dealing with koshering, kosher procedure changes, and kosher audits.

Our audits where I worked previously, were very quick and lasted on average 1/2 hour with more time just chatting. I got caugt out once as new Rabbi wanted to see everything from oven starting up through to finished product being packed. Started at 10pm on Sunday night and finished late Monday morning. The oven runs at 180°C but he wanted an extra 10°C over to Kosher it and to run like this for 30 minutes much to the bemusement of our engineering manager. Other parts of the line were koshered by boiling kettles and pouring the water on belts etc. All in all a night best left to be forgotten!

I was reading with interest this topic since I wanted to know more about this certification.

In Italy, a small company manufactures a chocolate spread that is Kosher Dairy certified.

This product has skim milk powder among his ingredients. Then, what the aim of a kosher audit should verify?

The kosher supervisor (usually a Rabbi) will check where the ingredients come from, if they are certified kosher.

If both kosher and non-kosher products are produced they will check that there is total seperation between the lines.
