First you need to understand what the rules are regarding antibiotic use and withdrawal times as per regulations in your country.

 

Then you need to review the antibiotics that have been used and see for yourself whether or not withdrawl periods have been followed prior to processing.

 

The only other thing you may want to do, is send out representative tissue samples for a lab for residue testing to ensure that anything found in the tissue is below the maximum residue limits (MRL) for those medications
