Food fraud/defense are not a part of HACCP. They've come about from the USA after the 9-11 attacks......it started the bio terrorism regulations
A good HACCP plan should include the following PRP's
- Premises
- Transportation, Purchasing/Receiving/Shipping and Storage
- Equipment
- Personnel
- Sanitation and Pest Control
- Recall
- Operational Prerequisite Programs
Here is a link to the CFIA Food Safety Enhancement Manual that may help and it's what all Canadian Meat, Dairy and Egg producers MUST follow; i may be biased, but I happen to think it's one of the most comprehensive plans to address a good HACCP plan.
