YOu're looking for death rates etc for yeast/mold

 

What sort of product composition (aW, pH etc) kill step.....need a little more info.......death rates depend on a lot of variables

Hi Michela,

 

Unfortunately I predict that it doesn't exist. Especially if you require at one temperature. Presumably << than L.monocytogenes though.

 

afaik it doesn't exist for bacterial species either although probably more easy to calculate from z-equation.
