I just wanted to check and see if I could get some feedback and ideas on the best way to go about verifying our labeling for allergens at product changeover.

 

I've read a few good ideas but I'm not sure that they would work for us with the way everything currently functions. 

 

We're a small bakery that makes 250+ different items that are sold in both grocery stores (packaging has a UPC) and for food service (packaging only lists ingredients, no UPC). We don't run our production "line by line" as sometimes we may only be producing just one loaf of a particular type of bread depending on the day and what was ordered. 

 

I am making an allergen label verification form, but just want to make sure that we have all our bases covered and don't accidentally miss anything (especially since it could be very easy for one single loaf of bread to not get recorded).

Hi, Redbudke.

 

 

These are the things we employed for label checks.

 

I will exclude QA acceptance on this list.

 

1. First, we have employed the use of artwork scanner for 100% scanning of produce but guessing from what you have describe, application of such may be complicated for your set-up.

2. You can also employ use of barcode scanner that you can interlink with your conveyor if you have. This can be done by scanning quantified number of samples once the packaging is delivered in the line (ready for use). The frequency and number of samples will be depending on complexity of the line and historical data where supplier have accidently included different labels in one batch or your operation history.

3. Manual check of label before use and end of line. Again, the frequency will be depending on you set-up.

4. Then if you have in-line, you may want to include in their routine label checks.

Put a binder together in order that makes sense..........so product code or name. The BATCH paperwork needs to also include this number AND description on the production record

 

Put a master copy of each package (laminated) into the binder

 

When the packaging is ready to go onto the machine, a line check to verify roll against BATCH and packaging MASTER....do this each time the roll needs changed............so employee would have to write down the UPC or better yet, keep one off each roll as verification that the correct label was used

 

If there is no master to look at then the point is moot

Can you print an extra label at changeovers and attach it to your changeover form and keep that as your verification? We did that at one of my previous companies and then circled the allergens/statement on the label with initials and time of check.  For this to work though you do need a master list of some sort to perform the check against (as Scampi indicated above).

Thanks everyone for all of your feedback. We label everything by hand and don't use machines or rolls, which just makes this more complicated. We have 4 or 5 packers standing at tables and they place the bread in either printed bags or in blank bags and add sticker labels that are printed on Avery label paper (depending on the product).

We do everything here manually (we have a semi automatic labeler but she's moody lol)

 

I use a label verification record where the UPC is recorded for each lot being labelled. 

 

You could implement a product code to the food service (alpha +DDMMYY or something like that) that you can use as verification

You can still verify the labels even though everything is manual!
