Revisiting sampling plans

We manufacture RTE imitation crab.  It's usually packaged in 1,2 or 5lbs bags.  We run 24 hrs a day, 6 days a week.

We do a complete cleaning once every 24 hours (takes 3-4 hrs) and a partial clean-up every 4-5 hrs (takes about 1 hr)

 

We do micro sampling and test or salmonella, E.coli, listeria spp. coliform, and something else that is escaping my tired brain.

 

Based on the limited information, how would you go about setting up a sampling plan? How many samples would you test?  How large of a sample?

 

Currently, we think we're testing a LOT more than needed.  Based on BAM, we could drastically reduce our sampling sizes.  We're thinking about doing something in the middle, but want to hear what others would say.
