Hello,

 

I am new to this network. I own a wholesale bakery in NY, and am very behind on my written documentation.

I was recently inspected and was told I have to get this started ASAP. They specifically concentrated on a banana walnut muffin.

They told me to have that product done before they get back and then start the next items. We make many different items and said it would be overwhelming to think about more than one,

 

They want a hazard analysis. Can anyone show me an example of a hazard analysis for a muffin? I just need an idea.

1.  Who told you to get it done?

2.  A hazard analysis for HACCP / preventive controls?  or for something else?

2.  Below is a link to the FSCPA participant manual.   There is an example of an omelet plan at the end which should help.   

3.  You really need to take a HACCP course and Preventive Controls course if you have not done so.
