Per SQF the Senior Site Management should take a certified course on Food Protection and Food Defense.

Our COO took the course in 2021.

Would the rest of the QA team be in compliance if they took  IFSQN food defense & food fraud course.

"Should" is not a requirement, therefore there would be no compliance issues if no one else goes.

You can train the rest of the team if you have been trained.  Personally I have only ever been asked to show my HACCP, SQF and Internal Auditor certificates.

Do you fall under the USDA or FDA. If you fall under the FDA, a food defense course is required. You are good with one person however, for certifications that are required, it's always good to have one more person trained. In case something happens to that person

Thank you so much for posting the link to the food fraud prevention academy!  I'm just through the first lesson and it's making me feel more confident with what I've created so far, and helping me strengthen it.  I am starting from the ground as we move from AIB into SQF and Organic.  Our GAP audit is next week and I've been in panic mode on a few things, Food Fraud (including organic) being a major one as the FDA and USDA say our facility is exempt from both.
