Pizza left out of overnight wrapped in foil...safe to eat?

Morning, my son made a pizza at school yesterday (safely by all accounts).

He brought it home still warm and wrapped well in tin foil.

It was left out overnight on the side for 12 hours at an ambient temperature.  Until I just put in the fridge.

Toppings are the usual cheese and tomato with some pepperoni and small pieces of bbq chicken.

 

They want to tale it for school lunch, Is it likely to be safe to eat or not?

Well not exactly (scientifically) Avila, but in the end we decided to throw it in the bin....much to the discontent of my son.

He can make another pizza at weekend.

AHHHHH YOU THREW OUT PIZZA??????

 

Honestly?  When I buy pizza from a shop I typically buy a large.  I eat about 1/2 of it through the day.  I leave it on the counter, in the oven (not on), on the oven... wherever there is room.  The next day I take out a few slices and microwave them... this can go on for a few days... until it's hard then I don't eat it anymore (you can... just it's not as good after the microwave.)

 

Pizza is a super safe food (ok but really what I just said above is true.)

 

You don't need to refrigerate pizza and can eat it for a few days just sitting around.

Simon you hurt my soul by throwing out pizza... the food that I like to refer to as mana from heaven.

Short answer, no, not entirely safe to eat.
Bacteria grow most rapidly in the range of temperatures between 40F and 140°F, doubling in number in as little as 20 minutes. This range of temperatures is often called the “Danger Zone.” That’s why the Meat and Poultry Hotline advises consumers to never leave food out of refrigeration over 2 hours. If the temperature is above 90F, food should not be left out more than 1 hour.

Friday night is pizza night in my household and we buy plenty of extra so we can snack on through the weekend.  We do refrigerate it. 

 

Setanta is right about the temperature, but I am with Mr I on the sanctity of pizza.  Pizza.....its a terrible thing to waste.  :roflmao:

PS - As a POR, I might add that in out-of-the-way locations where the local food was debatable, I developed a  SOP involving a stock of airport ham rolls for up to 3-4 days usage. So far no provable health consequences in various ambiences. Thks to sodium nitrite perhaps. Pepperoni may well be equivalent but chicken sounds scary.

We have a fridge, but people forget to put things in it.

Personally I would have eaten it as it was fully wrapped in foil when warm and left to cool.

I've eaten much worse...I was a student once. :lol:

I think we all know how scary restaurants are - especially pizza joints. No hair nets, untrained/overworked/underpaid/disgruntled staff, lack of regulation. 

The rare times that I do eat out, I force myself to avoid looking in the direction of the kitchen for fear of what my eyes might see and never forget.

 

Personally, I feel you made the right choice. 1.) Kiddo can make another pizza, 2.) You'd hate to be that parent that went against his/her intuition and created a situation in the school, 3.) Children are a high risk group to begin with, etc...

The foil was the part that concerned me the most, Simon. It artifically kept the pizza at a higher temp, providing more opportunity for 'bad stuff' to grow. Esp. with chicken. We Food Safety types have to lead by example, you know... :D

What happened to the scientific method?  You just threw it away.  You could have had 1/2 of the household try it and the other not and compared results.

What we are concerning about is the presence of Staphylococcus aureus sp. It common happens on cooked food which stored in ambient temperature for certain time enough for this bacteria to grow up and produce toxin. This bacteria is easy to be destroyed by heat but not the toxin. Another thing to be remembered is Staph. aureus usually contaminates foods after heat process which kill most of spoilage microbia. That means there's is a risk of toxin contamination even no signs of food spoilage (this is the reason why food poisoning case happens).

In case of pizza made by Simon's kid, we are not sure did he concern about sanitation and hygienic condition which lead to Staph.aureus contamination after cooking?

Personally, i don't want to take the risk of being poisoned by this kind of food.

PS. I'm also a pizza mania but love my life  :lol2:

I'm not sure, unless you've worked in a pizzeria, that you can truly understand the gravity of that situation.  When I was in high school I worked in one and I was the only one who ever washed their hands...  I was the fry guy though so I was handling raw chicken all day when I was there.  But everyone else... maybe washed their hands once when they got there... but probably not.

Well I got up in the morning and the pizza was on the side all night and I thought am I going to put my son at risk or not.  By the way I neglected to say he would have eaten it cold (does that change things...I mean am I still a wuss? :smile:)  The only one so far in the thread to offer a technical answer is this one from Avila Muncar, all the rest have been hysteria.  :silly:
