Tips for an Effective Environmental Monitoring Program

Taking place:

Friday, July 28, 2019 - 03:00 PM - 04:00 PM UK Time

This is a 10.00 AM Eastern US Start

Presenter:
Dr. Douglas L. Marshall, Chief Scientific Officer, Eurofins Food Safety Systems

Webinar Overview:

This webinar will give attendees the tools necessary to address four food safety issues in the processing environment: 1) finding spoilage microorganisms in the environment before they affect product, 2) finding allergens in the environment before they cross contact product, 3) finding pathogens in the environment before they contaminate product, and 4) assessing effectiveness of cleaning, sanitation, and employee hygiene practices.

Rebecca Mohabir : .
liliana ismail : how to test on water sampling?
liz Lee : are there examples of the facility sampling grid?
Amanda Faltynowski : implicate your product doing that
Derek Jessup : But isn't the whole idea is to make sure there is nothing there?
Prici Stella : is it true that the environmental monitoring will not covered product contact surfaces, if the cleaning method is already being validated
Dr.Seema Ashraf : How we can use on oil and fat test??
Anna Koo : Hi Simon, Where and when can we get a recording of today's presentation thx
Tristan Binkley : Do you still recommend testing product contact surfaces in a manufacturing facility where no allergens are directly used in processing?
liz Lee : what are common biofilm areas?  I'm thinking of hoses...
Dr.Seema Ashraf : which one is more effective method ? regarding ensure food saftey
Simon Timperley : We send an email to all registrants with slides and recording usually within a couple of hours of the webinar ending.
Anne Hurlebaus : how often should we test
Keston Heinen : What's the best way to test for biofilms? ATP swabbing?
Yehia El-Samragy : Hi everybody
Lorien Carley : If you want to BEGIN Zone 1 testing- it's tricky b/c if you have a +, isn't ALL product run previous implicated
Derek Jessup : Depends on if you have a kill step after your production step.
Lorien Carley : Q:  If begining Zone 1 testing- how to mitigate risk of implicating previous product-?
Dr.Seema Ashraf : Hi simon send us the ppt recording on my side here ww have networking error
Amanda Faltynowski : Keston, The issue with ATP is that the numbers can be from any residue and not specifically from bacteria. The numbers do not directly correlate with the number of microorganisms
Renan Gomide : What would be the best way to monitor a Spice Room?
Nikhil Narwal : Ratio of samples between Zone 1,2,3 and 4?
Frances Blosser : Duh!!
Prici Stella : what is the right chemical that can effectively remove an allergen or biofilm from the product contact surfaces?
Raymar Richards : How does this fit in PET Plastic Bottle production facility? Dry manufacturing. Does the micro's survive on plastic?
James Muriuki : Is it necessary to test for salmonella in manufacturing of roasted macadamia nut? While macadamia is an allergen itself, how can you test for allergen cross contact?
Narongchai Yookittichai : if the office room or Engineering Workshop located in another building disconnected from production area, is it called Zone 4?
Amanda Faltynowski : Prici, there are a variety of chemicals that can be used for cleaning. The commonly used are probably PAA and Chlorine based products. With Biofilms, you often need a much higher concentration as biofilms have a protective EPS layer which makes them much higher to penetrate
liliana ismail : thank you you will send the slides :)
Simon Timperley : yes
Krishnan  Rajangam  : Hi good evening everyone. From Goa. India
Ashly Sylvester : Our plant tests zone 2-4 every Tuesday and the hot spots the 1st Tuesday of the month.
Derek Jessup : Ashly, wouldn't you want to test a "hot spot" more frequently since it is an indicator of pathogen growth?
Anna Koo : Is ATP an acceptable allergen verification after cleaning and sanitation?
Alyssa j : @ Ashley.  Do you have an onsite lab doing your testing?
Tristan Binkley : ATP testing wouldn't tell you anything about allergens being present or not
Derek Jessup : ATP is not an indicator of allergen testing. Allergens are proteins which do not contain the living material indicator of ATP to bind to.
Ivan Z : In a recent training with a microbiologist from Ecolab, he focused on biofilms. Accordgin to him, no chemical is extremely effective with biofilms even at higher concentrations. Best method is usual, throrough and careful mechanical cleaning method - scrubbing.
Jose Chipollini : Great information!
Anna Koo : @Ivan Z - so concentration is the most effective factor, it's the cleaning frequency and quality of the cleaning?
Ashly Sylvester : Our hot spots tend to change, since we focus on cleaning them more often. I have noticed that after 6 to 9 months we change the hot spots, yet drop them to regular schedule.
Jose Chipollini : You can also use REealzyme a enzyme combo to breakdown biofilms
Muhammad Zahir  Ghori : Hi
Ivan Z : @Anna Koo, concentration is NOT the most effective factor, plus increases costs and potential chemical contamination. Cleaning frequency/technique is key.
Ashly Sylvester : No we send in all of our Environmental swabs.
Amanda Faltynowski : There are a few products on the market that do have biofilm claims. There is a standardized test to show efficacy against biofilms. Buit yes many chemicals are not effective. Mechanical cleaning definitely can play a large role in removing the biofilm
Ashly Sylvester : We also started sending in a Negative Control along with our swabs for the week.
Derek Jessup : Relatively new to swabbing. Anyone have any experience with pathogen SPECIFIC swabs? If so, how well do they work?
Amanda Faltynowski : all about the 4Ts, Time, Temperature, Titration, Turbulance
Alyssa j : @ Anna.  I do the ATP aller-snap test prior to my ELISA testing to first review the cleaning effectiveness but for validating your process, allergen testing will be necessary.
LAMPROS MICHAS : Technical standard of air-pathogens'-testing(e.g. open plate method, etc.)?
Derek Jessup : @ Anna and @ Alyssa. A company called Romer Labs have allergen specific swabs that work with the hygiena ensure analyzers. I have not used these yet, but sat through a sales rep meeting on them. You know how that goes though. It appears to be an effective swab however.
Karolina Strumska : Hi all, my university had a short course for industry professionals in regard to cleaning and sanitation; it could be useful to look for something like that
liliana ismail : how to control pathogen level in the medium?
Bonnie Forman : How do you decide action limits on a dry clean environment and what should a corrective action be when all you use to clean is a broom ( the product it not RTE)
Derek Jessup : @Bonnie. That seems to be the hardest thing about this program is to set the limits. The generalized "standard" limit that has been shown is 10 and 30, but it all depends on the production facility. Many aspects, say flour dust, can throw off your limits as well. That is why the pathogen specific swabs come in handy. Being as it is NOT RTE, what kill step are you using after?
Lorraine  Baxter-McPhie : Thank you Doug.
Stanley Martin : Can sanitation residue be tested for
Md. Ashraful Islam : Dear Simon,
ian reader : Do you feel the spread of the pathogen is non-homogenous for random dsamplinng and not aggregated sampling?
Riaz Ahamadeen : Hi
Neevee Pierce : This was very informative- I thought I knew everything I needed about EMP's but I have some great take aways re: pathogen sources and testing
liliana ismail : connection level is gd
Raymar Richards : How does this fit in PET Plastic Bottle production facility? Dry manufacturing. Does the micro's survive on plastic?
MUHAMMAD  ADNAN : Very informative. Excellent.
Abd El-Rahman El-Garhy : ref of limits of pathogen and micro for hand swab and surface swab
Lorien Carley : If you want to BEGIN Zone 1 sampling, how to mitigate risk of implicating ALL previously run product should you get a positive hit for a pathogen-?
Maickol Rafael SancheZ Leger : yes
Maickol Rafael SancheZ Leger : me too
Md. Ashraful Islam : Dear Simon, Would you please send me thye slides. Thanks
Riaz Ahamadeen : will you be sharing the presentation afterwards ? as it was presented pretty fast today?
Maickol Rafael SancheZ Leger : good
Maickol Rafael SancheZ Leger : thanks
Frances Blosser : What about that recent flur recall?
Alyssa j : it is interesting that Hong Kong and Australia have established limits but I am unable to find set parameters by the FDA.  Like Derek, I am interested in some established limits.
Kevin Dantzler : What is a good risk assessement tool for a raw meat manufacturing that isn't ready to eat and will be cooked prior to consumption?
Bonnie Forman : Derek we don't have a kill step our product is sent off to the next processing plant to be package or canned,or sometimes a customer sends Black Beans to Mexico market  to for customer to buy and cook themselfs
Maickol Rafael SancheZ Leger : If I process fruit drinks and do environmental monitoring every three months of coliforms in zone one, coliforms in zone two and coliforms in zone three. I take a sample of each area. I'm fine?
liliana ismail : the corrective actions should be high or low ?in pathogens like listeria salmonella ?
Maickol Rafael SancheZ Leger : If I process fruit drinks and do environmental monitoring every three months of coliforms in zone one, coliforms in zone two and coliforms in zone three. I take a sample of each area. I'm fine?
Parameswaran ganesan : how to ensure microbial load in Finished packing tote containers
Aakash Koli : Very informative presentation. Thank you!
Thembeka Zwelibanzi : If producing canned sterilized fish. where would be by zone 1.
lydia BARRON : For low acid canning- was told don't really need an Environmental program?
Jasdeep Verma : It was a good webinar. Thanks Douglas.
Mark Dargay : Simon, this was a GREAT webinar!!
Amit Kheradia : Why do we have a zero limit for Listeria in the US, while in some country jursdictions there is a max. limit for RTE products?
Bonnie Forman : What test does the lab use for indicator organism, you are are approved lab
MANOJ INGALE : in trend if we found that there are no pathogens from last few months shall we increase the frequency of to more month..
Riaz Ahamadeen : currently everyone is recommending testing STEC instead Coliforms & E.coli in finished products and how is your suggestion on this?
Jose Chipollini : Great job Doug!
Dennis Grayson : Could you please talk alittle about FDA swab a thon how to handle when they show up?
Eddie Odie : How important is it to have an environmental air program We are  our services But I am getting pushbackForAdding environmental air
Rihab Abidi : for the field of packaging of olive oils, what types of pathogenes likely to be tested? knowing that there is no high risk area and no direct contact with the product
Prici Stella : will a pallet be part of zone 1 product contact surface? if lets say there is a mold due to wet pallet. and will there be a chance of the mold get into the product inside the bottle that kept on the pallet?
Anna Racławska-Rydel : is salmo testing obligatory even if every product batch is tested for Salmo?
Lorien Carley : Thank you!
OBrien Mutule : whats your opinion on use of hand gloves and frequent hand washing
Amisse Aly : Well done, Doug!
Melanie Keil : would you be willing to again cover the reasons behind not testing food contact surfaces?  We are a RTE heat treated, shelf stable meat facility and follow USDA recommendations for testing Food  Contact Surfaces
Maickol Rafael SancheZ Leger : If I process fruit drinks and do environmental monitoring every three months of coliforms in zone one, coliforms in zone two and coliforms in zone three. I take a sample of each area. I'm fine?
OBrien Mutule : how is h
Brittany Blanco : What are the requirements for performing sanitation validations? Do you use incoulated validations with surrogate organisms?
Eddie Odie : How do you feel about environmental air sampling How important is it to have it addedToYour sampling program
Abd El-Rahman El-Garhy : do you guide us reference for limit of microb in dry manufacture in FDA or WHO?
Narongchai Yookittichai : if the office room or Engineering Workshop located in another building disconnected from production area, is it called Zone 4?
Frances Blosser : Good webinar!
MAXINE CAMPBELL : Can you recommend a published inspection monitoring protocol? protocol
MUHAMMAD  ADNAN : What about using bioluminescence technology that look for microbial as well as  organic product residues,  as it is an ATP detector. Does it has any significance if we use in place of specific microbes testing?
Bonnie Forman : The problem is not customers its BRC and SQF are saying that everyone has to have a EMP doesn't matter if the product is low risk
Innocent Laurent : Thank you!
OBrien Mutule : what your opinion on use hand gloves as opposed to frequent hand washing in cold chain food handling facility
Ivan Z : Great info and great presenter. Thank you Doug and, as usual, Simon.
Thembeka Zwelibanzi : Thank you very much. Much appreciated
Paty  Ramirez : thanks a lot
Derek Jessup : The key is to realize that just putting on gloves does not make their GMP clean and sanitary.
celesius mukhungulu : Thank you.
MANOJ INGALE : thank you for valuable information
Maickol Rafael SancheZ Leger : If I process fruit drinks and do environmental monitoring every three months of coliforms in zone one, coliforms in zone two and coliforms in zone three. I take a sample of each area. I'm fine?
Nilesh Bhalekar : thanks
Riaz Ahamadeen : How about the Acidified Foods manufactured in PET & Glass Bottles without sterilization process only with blending or sometimes with Cook Step as CCP? How intense you will need a environmental pathogen monitoring?
Sujit Kumar : this webinar is better and more informative than last one that I had attended... thank you...
Bonnie Forman : Thanks
SUHAIL   BIN UMMER : Does this EMP comes in the PRPs or oPRPs..?
Andrew Keller : Doug, thank you! Simon, great presentation!
EBANDJI BETTINA : GRAET PRESENTATION
Karolina Strumska : if I performed a risk assessment and determined product and environment to be very low risk, is this acceptable to pass a GFSI-scheme audit? or is it mandatory to do some type of swabbing?
Christopher Pustizzi : If utilizing EB as an indicator, and found out of spec (>100 cfu), is product considered adulterated?
Sarah Muncy : This was a really great webinar - Thank you!
NIZAR RAMJI : Very educational session. Thank you.
Derek Jessup : I'm assuming the "beautiful experience" statement was sarcasm at its finest?
Babatunde Agboola : Hi
MANOJ INGALE : thank you for the answer ..
SUHAIL   BIN UMMER : Is this EMP a PRP or oPRP?
Marisol Acuña : Hola !!, ¿Sí, los productos están en sistemas cerrados,  ... se aplica el concepto de monitoreo ambiental en los sistemas cerrados, donde el producto no está expuesto a una recontaminación?
Dennis Grayson : Great thank you Doug.
Hlonipani Nleya : Um considering implementing an EMP in my facility. Of concern are primates "monkeys" which are inherently in our environment. Theres not much we can do about the primates coz of local regulations. How best can i make the EMP more effective.
Jeffery Stenner : w
Jeffery Stenner : Karolina, as an SQF auditor I look for two things, your risk assessment and how and if you established a baseline for Enviromental Monitoring.
Rihab Abidi : Thank you very much doc
Ashly Sylvester : I learned a lot today. Very informative. Thank you.
Derek Jessup : @Hlonipani I am assuming you have an open production environment, otherwise you should be able to keep them out? I would say you have a much larger problem to worry about. There should DEFINITELY be an EMP utilized in your facility. Especially if you are RTE.
Fathiya Williams : Thank you
Derek Jessup : @Jeffery. Aiming for SQF certification here. How do you like to see our risk assessment in association with the EMP?
Ashly Sylvester : Could I get the slides for this presentation, to share with the rest of my team?
Hlonipani Nleya : @derek its actually a closed production operation. But they are all over the place kkkk
Mohammad Abid Mubarok : about the micro issue on aseptic filling environment. could you please give me some possible causes of contamination?
LAMPROS MICHAS : A (really) VERY informative presentation
Amit Kheradia : Is it correct to say that just because we will be testing for Indicator organism in Zone 1, a first pass on a positive test is allowed, followed by a root cause investigation? If we tested for pathogens in Zone 1, that'd be a recall then ...
Nilesh Bhalekar : what will be freqency of cleaning cold storages maintained below 5 deg cel to prevent listeria contamination
larbi chouguer@yahoo.com : thank you
Alyssa j : @Ashly. Simon will send the slides.
Derek Jessup : Correct me if I am wrong, but I am fairly certain this exact presentation is on YoutTube.
Jeffery Stenner : I got in late, looking forward to seeing slides and recording to see what I missed.
Dr.Seema Ashraf : very very informative presentation looking more from Doug .thanks
SUHAIL   BIN UMMER : Is this EMP comes under PRP/oPRPs or both
Salvador  Mendoza : Upon arriving late, are the supplemental slides available? Also having connection issues.
Ivan Z : Every registered participant received Certificate, Slides and Presentation links on email.
Ivan Z : *receives...
Ivan Z : Yes, very good webinar...
Malaurie Orrin : first one for me - live- very informative
Laura Surkan : prp = prerequisite program, oprp = operational prereq program i assume
Ivan Z : PRP - Prerequsite Programs?
Cindy Guerrero : PRPs = Prerequisite Programs
Thiago Zilli : How Listeria identification could affect fresh baked bakery products?
Ricardo Mendoza : Great information
Aravinthakumar Gnanasekaran : Excellent presentation, Thank you
LAMPROS MICHAS : PRP:prerequisite rpogrammes, whereas oPRP operational prerequisite prgms
MANOJ INGALE : prp: prerequisite program
Coleen Marcia Henry  : PRP refers to HACCP prerequisite programs; oPRP refers to operational prerequisite programs
MANOJ INGALE : oprp:operational prp
Anna Koo : Do you have a reference/link to find indicator vs pathogen correlation
Malaurie Orrin : i need to go. thank you for your time .
liliana ismail : i love the webseminar ,prp pre requisite program oprp operational pre requisite program
Ivan Z : Lol....humans are worse than other primates!
Hlonipani Nleya : Thank you very informative!
Anna Koo : Thank you Doug & Simon! Super useful, would like more of this topic
Narongchai Yookittichai : Thanks
