Hello everybody, 

 

I am researching what kind of test to conduct do define the stretch of a shredded pizza cheese, but all the documentation I find dates back a few decades (early 2000). 

Mostly I found out there is such thing as a pizza fork test, which is rather unreliable, and its scientifically adapted cousin, the USU test. 

I also read about the ring and ball test, which isn't adapted for shredded cheese (only works with slices). 

 

Therefore, I was wondering what test do you guys use?

Yes data about stretch test of cheese  is some what dated. I have found this paper published in 2012 which may be of help

 

The author claimed good repeat ability and it does not appears to be very complicated
