Albert Espinoza Espinoza : For Samantha, Research your country/customer data on allergic incidence.  For example,  The U.S. has declared eight food allergens (Big 8) to be of most concern, including milk, wheat, peanuts, tree nuts, fish, shellfish, soy, and eggs. These foods were identified because they cause about 90% of food allergenic reactions in the U.S.

My Q. is on : validation for cleaning food contact surfaces  from  allergens and microbiological organism, we design a program where we contamineted the suface, with allergens and micro and using the wrost scenario machinery. after the cleaning,  we will analize the surface. what Do you think about this way of validation? what is your advise ?
