I have a question, What does KPI's mean and what is the function in the audit?
KPI = Key Performance Indicator. These are measures that tell you how well or badly you are doing against your chosen objectives or targets. For example a KPI for internal audit could be number of nonconformities identified a year by your internal audits or how long it takes to close out NC's.
Regarding function. An audit is to check that everything physically and documentation is as per the standards, procedures and requirements of your business, usually stated in your food safety management system procedures.
