Pitfalls of Accounting for Intentional Adulteration in Your Food Safety Plan

Taking place:
Friday, May 18, 2018 - 03:00 PM - 04:00 PM UK Time
This is a 10.00 AM Eastern US Start

Presenter:
Earl Arnold, Global Manager, QA Food Defense and FSMA, AIB International

Webinar Overview:
How do you document intentional adulteration mitigation strategies in your facility? FDA’s Food Safety Modernization Act now requires that food facilities plan for intentional adulteration in a documented food defense plan. Although the requirements are similar to a food safety plan, there are distinct differences. Combining the food defense and food safety plans may create an opportunity to miss key elements in both. Learn the pitfalls of accounting for intentional adulteration in your facility’s food safety plan. We will discuss and compare industry best practices with regulatory requirements and make suggestions on how to prevent developed mitigation strategies from being compromised.

S G : what is the difference between deviation and Non-Conformance?
Benson  Chiamaka : hello everyone
Ernest Daigle : What do you all make?
Narongchai Yookittichai : Is it necessary for QI to attend and pass the FSPCA IA Training Course, like PCQI?
Rose Spear : Is food defense the same as food fraud?
Jim Gresdal : Rose - No, not the same thing
Laurent CAMBEROU : So the difference lies in the intention of the employee (disgruntle or negligent) ?
Narongchai Yookittichai : Free course for FSPCA Food Defence Awareness: https://www.ifsh.iit...rse-description
George Goulas : @Narongchai Yookittichai  check the definition of PCQI. It is not  necessary
Evelynn Bryant : @Rose Spear - I believe the difference is intention. Food Fraud would be an issue of intentional adulteration of product for monetary gain, disgruntled employees, etc. Whereas food defense is the protection of the product, from negligence, lack of awarene
Jessica Manning : But it is necessary for PCQI training?
Ernest Daigle : We are having difficulty creating a food fraud vulnerability assessment. Searching for incidents of food fraud related to the ingredients we use is difficult.
alyssa j : Here is the FDA Food Defense 101 course link https://www.fda.gov/...s/ucm353774.htm
Rose Spear : Thanks for the clarification Evelynn
Narongchai Yookittichai : @Ernest Daigle, try the www.foodfraud.org but it is not free.
Ernest Daigle : Food defense also involves protecting your assets (equipment, buildings, etc.) and your brand name as well as the food itself from intentional damage.
Evelynn Bryant : @Ernest Daigle I used this tool to get me on the right path for our assesment https://www.pwc.nl/e...fraud-tool.html
Denis Belanger : In our organisation, we defined Food Fraud as an issue initiated by management or plant owner for an economic gain. If an employe or visitor tampers product for his gain - thats food defence.
Ernest Daigle : I have added both links to my Safari browser. Thanks!
S G : Ingredients or preservative used in the product and what it shows on the label, if that differs then is it a food fraud?
Evelynn Bryant : @Denis Belanger - Wouldn't those scenarios both be food fraud? They're both intentional adulteration.
Ernest Daigle : Food Safety Plan Builder and Food Defense Plan Builder software the same thing?
Narongchai Yookittichai : @S G, if it is not safe so it is a food fraud in line with EMA (21 CFR Part 117)
Jon Greenberg : Anyone have the link to the FDA safety plan builder?
Denis Belanger : @Evelynn Bryant we dont beleive that an employe tampering product for his gain is food fraud but food defence  as his intent is to hurt the company
alyssa j : https://www.fda.gov/...s/ucm349888.htm   FDA Food Defense Plan Builder link
Christian Wonders : Hello Mr. Arnold, prior 68R here
Shayra Martinez : Food Safety Plan Builder link https://www.fda.gov/...A/ucm539791.htm
S G : Thanks Narongchai Yookittichai !
Raluca Dudescu : Hello from Romania.
Evelynn Bryant : @S G I believe so. That would be intentional adulteration. If it was intentional misrepresentation of a product, it would be food fraud. If it was an accidental addition of an ingredient, due to a purchasing error or inadequate info from a supplier, then
Patricia Symister : Good morning from Jamaica
Narongchai Yookittichai : https://www.accessda...etyPlanBuilder/
Jon Greenberg : Thank you alyssa j
Raluca Dudescu : Ty for the links
Evelynn Bryant : @Denis Belanger That makes sense.
Jon Greenberg : And Adam and to everyone else
Narongchai Yookittichai : https://www.accessda.../fdplanbuilder/
Lauri Glasgow : In another webinar I attended, it was mentioned that the current Food Defense Plan Builder did not meet the requirements required for a Food Defense Plan under FSMA.
Shayra Martinez : There are two different builders, Food Defense Plan Builder and Food Safety Plan builder, for Food Defense you will use the Food Defense Plan Builder.
alyssa j : Connecting and sharing ideas, links and knowledge with fellow industry colleagues is one of additional benefits of these great webinars.
Evelynn Bryant : @alyssa j Totally agree!
alyssa j : @Lauri, do you recall what deficiencies that webinar mentioned?
Fran Cook : ORM seems a lot like forms 5,6,7 of HACCP?
Ernest Daigle : I would hope the FDA will update their Plan Builder software packages to become FSMA compliant
Jennifer Stivers : Sound?
Kartik Sharma : food safety plan builder gives you compliance with 21 cfr 117.while update of fdpb will come shortly
Betzy Gil : Carver is also available for free
Clifford  Ramlogan : Hi, I joined late.... will i be sent the link to see webinar later please
Ernest Daigle : I am currently doing the AIB Food Defense Coordinator Online course. Highly recommend it!
Simon Timperley : yes as always we send the recording and slice later Clifford
Simon Timperley : slides
Marie Robidoux : Me too I could not watch the webinar
Kartik Sharma : please share recording and ppt..joined late
Scott Jensen : To me, this didn't clarify anything on how and who are you preventing against?  Is it a "Breaking Bad" PhD person who knows the whole system or a barely literate person?  is it a person that knows how do get microbes or a person that doesn't seem know to wash their hands?
Diane Ragazzi : Any Agent & Brokers here?
Ernest Daigle : Will a complete transcript of this webinar be available for further review?

JOCELYN SANCHEZ : Thank you for the very informative webinar.
Iryna Dyachenko : What are possible emergency steps in the food industry for a case when all staff will have food poisoning
Narongchai Yookittichai : @Boonyawadee, Hi
Ernest Daigle : Yay! We need that course now!
Christos Zacharis : How are freighters affected by the food defence plan? Are they responsible for their own activities or will the companies be the only accountables for the transport?
Jan Lillemo : I took AIB's Food Defense Coordinator class in 2002. Is the on-line course the same? Is there a reason to take it again?
Ernest Daigle : That helps a lot. I want the printed Food Defense Coordinator materials since I'm doing this online.
Rocky Weible : What is the fee structure like for AIB?
S G : In Audits sometime the auditors are aware of the possible hazards in the facility, even though the company is SFSF, HACCP certifired. I'm just wondering that why auditors neglect this hazards and on what basis do they pass the audits?
MOHAMED FADOL : Thanks, good webinar
Vivian Lee : How to keep the food defense plan confidential if it is being audited by GFSI or requested by customer? (per earlier in the presentation when it was mentioned food safety plan is available vs. food defense not available to the public)
James DeLaMare : the new coe is very different from the course 3 years ago
Stacey Pirhonen : We've had customers request our Food Defense Plan.
Lauri Glasgow : In another webinar I attended, it was mentioned that the current Food Defense Plan Builder did not meet the requirements required for a Food Defense Plan under FSMA.  Is this also AIB's opinion?
Ernest Daigle : How many years will the new AIB Food Defense Coordinator certification be valid?
Iryna Dyachenko : In case a step had a high risk (e.g. Water Storage) in the Food Defense Plan, after the review, considering the historical data, can it become a middle or low risk (if nothing happened)?
Benson  Chiamaka : what are the requirements for one to take up AIB Food Defenxd Coordinatoe certificate.
Ernest Daigle : Stacey, write 2 plans. One without all of your specific internal vulnerabilites for customers and a more detailed document for your internal use.
S G : Thanks Earl!
Stacey Pirhonen : Thanks Ernest!
alyssa j : does the FDA have  a list of the gaps posted somewhere?
Rose Spear : The certificate of attendance can't be downloaded
