Good Day All, 

 

Is there an approved method for testing the pH of bread dough? Similar to the AACC test methods where you can use to create a testing program, I really need to find an approved method for testing of pH of bread dough that outlines the floor time and other factors to consider.

There are dozens of devices that you can use to test the ph.  I am not affiliated with any of these companies or recommended one as the best, these are just some of the examples and references found online:
